what are the options for audio out on iMacs?

I will be a first time Mac owner soon.....on my PC I have it hooked up via "optical" into my Onkyo can I do this with a iMac? What are my options for audio out?

If the old ones don't have it hopefully the new ones do. I like to play my iTunes music over on my AVR.

Yes, I am using one of them and it works fine out of the Apple Headphone Socket on both my iMac and Mac Mini.
