Yeah - Mac applications are extremely frugal with their memory use when running with no windows open. If there are applications you use regularly but don't need right now, just run them windowless - you'll only pay a tiny memory penalty for doing so, which will not be noticeable.
 
right now - Lotus Notes, Firefox, Word, Trillian, Track-It! (on a pc, hehe at work ;) )

at home -
Powerbook - Finder and Dashboard of course, Mail, iTunes, Firefox, and AdiumX are always open. Photoshop CS2 and Illustrator CS are open frequently.

Desktop PC - Newsleecher and Firefox, and Civ III for hours last night hehe

Not to get off topic, but what do you mean by this? Are you referring to people who use Dell monitors on their Macs? Are you referring to the new Macs with Intel processors?
