Double tap: Generate jibberish text and copy to clipboard (very useful when sending angry iMessages.)
Triple tap: Handoff playback to Bose SoundTouch.

Both are Shortcuts.

Would love a back tap to open the camera. Don’t see any uses for any the options provided.

I have this rhinoshield solidsuit case on and the taps work about 8-9 times out of 10. I haven't yet experienced it being triggered unintentionally probably due to the thickness of the case.

It's a great feature when I'm holding my phone awkwardly and can't reach the home button.

I'm using a siri shortcut for this that opens the camera app:
Set this shortcut to the tap and it opens the camera app when you tap the back.

Triple tap = invert colors (just for fun)

yeah straight to video capture would be a good option.
While the shortcut above just opens the camera app, you could make another shortcut that start capturing a video (just as you could automatically make a photo).
This shortcut should do this (using the back camera):

Double tap: opening the camera using the shortcut above. Ideal when you have a newborn and want to have the camera open quickly.
Triple tap: a shortcut that, depending on the hour of the day, executes different shortcuts, like setting my alarm clock depending on appointments the next day, start my workout and music, turn on the lights in the morning, turn on the tv for dinner.

None... it does not work well with the clear case. When I want to use it, it often needs 2-3 tries to work. On the other hand, it often activates randomly when I'm putting the phone down for example.

For double tap I have set up screenshot but sometimes when I put my phone on table it does it automatically:Danyone had same experience?
 
It was much worse in the early 14,0 betas; double and triple taps would acticate just by putting the phone down on a table or throwing it onto a sofa etc.

It's got better but still not perfect. That's why my shortcut to call someone pops up a menu asking how I want to call them rather than just doing the most common (in this case, FaceTime video) as I ended up calling them randomly throughout the day without realising!
 
i posted this before, but... it's still fun. no one (yet, outside of nerds & ppl on this forum) knows about back tap. so i set mine to invert the screen.

i tell friends i can invert my iphone screen with my fingers NOT touching the screen; i point 2 fingers at the phone with my left hand (while subtly tapping the back twice with my right)... and the GUI inverts. no one's figured it out 😂

other than that, it seems gimmicky to me, and don't need it. but cool if ppl find a, uh, more useful purpose for it.

‘Love it. Yes, I find it odd that people are doing things with it that are more easily executed the given way., (home, control center, etc). For me it needs to be something that saves multiple steps. I have mine set as “Find my wife”-opens find my, selects my wife and shows location. My 3 tap changes my bedroom Hue bulbs to what we call “pretty lights”, 4 colors that just make the room pop. You can link any action from the shortcuts app. This is where the tapping really helps. Wish I could add my Chamberlain garage door opening app...that would be nice.
 
Double tap: Shake (to undo, because I hate shaking)

Triple tap: Screenshot, but I'm thinking to disable it, as it activates randomly during the day. I had it on Double tap previously and it was even worse...

I've had to turn them off. Double was set to screenshot, but I kept taking too many by accident. My partner even accidentally screenshotted someone's kid on a snapchat story.

Triple Tap: I haven't set anything up yet.

I find that the double tap doesn't work all the time. Most of the time it does work, but maybe one out of every ten attempts (perhaps more) it simply doesn't work.
