I’m trying get some clips off of old hi8 tapes. This is the camcorder and only cable I have. What cable/adapter combo will I need to transfer these videos to iMovie?

You will need 2 adapters chained together (but no additional cords): Apple’s Thunderbolt 3-to-Thunderbolt 2 adapter, and then a Thunderbolt-to-FireWire 800 adapter (which Apple also makes). Plug those 2 into your MBP16, then the cord you show from the 2nd adapter into camera.

Another word of advice; before capturing the footage using QuickTime Player, iMovie or Final Cut Pro X, start playing back the footage on the camcorder for a bit before opening the import/capture window so that the sound goes through. Otherwise it'll be silent. Then you can rewind or fast-foward the tape to right before the part you want to start capturing in.
