Can I now use them on tmobile or Verizon? Would I limit you in anyway? Thanks
 
Your recently unlocked ATT XS and XS max phones are probably GSM phones. T Mobile is a GSM network, so your phones would definitely work on TMobile (may want to take a look at Mint--much cheaper than ATT or straight up TMobile and uses the TMobile network). Verizon is a CDMA network. That being said, the GSM/CDMA distinction is important for 2G and 3G functionality. I think 4G and now 5G are independent of GSM/CDMA, so your GSM phones will probably work on Verizon.

I went from ATT to Mint, and have noticed that there are a few more dead spots with the TMobile network than ATT, but overall am happy with coverage.

Pay less for the same or 99% of the same service. I always buy unlock and pay $25 unlimited.

All iPhones (XS and XS max, 11Pro and 12 series) sold in North America are the same model furthermore, there is no CDMA or GSM iPhone versions going forward.
 
You phone us unlocked to work with all carriers now. XS Max irregardless of it once being locked to a GSM carrier has CDMA bands as well
 
GSM vs CDMA should not be of any concern anymore in North America.
When I had an unlocked Xs I used to use the eSIM with AT&T and the physical SIM with Verizon. Then I switched to WT-Mobile and Verizon. Worked great!

Unlocked, so you can, if you have a need, have a backup line on another carrier as long as either your ATT line or the other carrier supports eSIM. Nice if you were planning to travel in areas that have large ATT holes in coverage.
