That say an equivalent 7th Gen Kaby Lake NUC or similar comparable computer can do?
- 4K @ 60hz
- New SSD's are faster
Basically what would make it worthwhile to switch to the dreaded Windows for? I have a 2014 mid tier w/ 256GB SSD. I do use a 4K TV as a monitor sometimes.

For me it's the opposite question... what can't the NUC do?

It can't run MacOS without a complicated and unsupported hack.
...Can't use my iTunes media.
...Can't run Final Cut Pro X.
...Can't run Logic Pro X.
...Can't run my $6000 worth of legacy Mac software.

There are more things, but those are enough to be a deal breaker for me.
 
I only worry about what i need to do, the rest is of no concern to me.
Having switched some workflows to windows, I'm mighty impressed with it and its rock solid.
 
All depends on your needs. Windows works just fine.
Only issue would be is if you needed a very specific program and it only existed on a mac. For me there's nothing I can't do on a PC that I can on a mac. But there are things I can't do on a mac and can only do on a PC. Just due to the availability of some software.

And I like Omnigraffle.
And I actually sort-of like the minimalism in functionality that Pages offers.

Currently, no need for a 4k display. Hopefully, the current 30" will last until there's a Mini that can do 5K (or whatever the next-gen Apple Display runs at - my guess would be that they're actually working on two displays: 5k and 8k).

I can't really justify spending 2 grand on that 30" NEC (non-4k) display. Though it would be super-nice.

2 grand?! Am I missing something? I got a 34" IPS dell, factory color calibrated, a couple of years ago for $660

NEC PA302.
It's a professional, color-correct, pixel fault class 1 display. It costs two grand (incl. tax) here. Maybe it's a bit cheaper in the US.

There are also various 38" displays that do 3840x1600. I'd have to see how these work in practice, though.
I think the 2014 Mini can drive those.

Actually, I could get the PA322UHD-BK for 2.5 grand, which is the 4K version.

I just like nice displays.

Currently using the old LP3065 from my boss. It's not a great display, but at least I got it for free.
Power-usage is absurd. It uses 10 times the amount of energy than the Mini, its maximum power usage is almost 180W - the PA302 is at 59W.

So, a Mini (or any headless Mac) and one of these displays, that would be great. I don't really need 3D or AR. Just a nice display for OmniGraffle, Sublime, Pages, Safari.

Ideally, the future headless Mac could drive at least three displays.

Agree in the main, i just don't get the windows hate - pure tribalism in most cases.

According to this support article, it can drive a 4K monitor at 30 Hz. Most people wouldn't consider that usable. I would, though -- for office work, not for playing a movie or what have you. I just wouldn't advise it.
