I got the gold Air2.
It is very nice, and the color changes (or rather the appearance of it) changes quite a bit depending on the light.
It is often quite a subtle gold...its nice.

To be honest, I spend the vast majority of the time looking at the front, so it doesn't matter all that much to me what color the back is.

I have a blue iPod touch (5g, not the new one), and a pink iPhone 5c.
I love the bright colors, but the understated gold gives it a premium feel.
 
My Air 2 is silver/white.

This was actually unintended. I had an iPad 2 before, and the silver model had a black front. So when I spontaneously, and without proper research, ordered the Air 2, I expected the front to be black, too. When it arrived, my first thought was, "I'll send this back." But it was Friday, so I figured I'd keep it for the weekend. By the end of the weekend, I had come to really like the white front. None of my fears about it being distracting turned out to apply, or it looking plastic-y cheap, and I actually found it easier on my eyes as well.

But yes, it was unplanned. :)
 
I normally prefer devices with black borders around the display. But I absolutely love my gold iPad. It's awesome. I hope that next iPads and iPhones will offer rose gold option with black screen borders.
 
I just bought a gold iPad Air 2 with the brown Apple Leather case. I wanted the silver but they were sold out. I've never been too keen on the gold devices, but I figured with the case you can't Really tell.
 
I just got the gold iPad Mini 4 and honestly after using it for a few days I wish I'd gotten my 6+ (Space Gray) in the same color. The white bezel is gorgeous to look at and the gold is classy. :\
 
I had a tough time deciding on my iPad Pro. In general I like how the white bezel iPads look and I especially like being able to see the ring around the Touch ID. (Oh how I wish the space grey had a matching ring around the Touch ID that matched the space grey colour of the aluminum so it stood out instead of all black. It's hard to see where the Touch ID is in the dark sometimes because it's all black, you can't even see the button.)

But I ultimately went with space grey because when watching content, the white bezels are far more distracting and I like how the screen is more seamless and doesn't show that thin black boarder between the screen and the bezel like it does on the silver/gold models.
 
Just a small thing to know if you're getting one with a white bezel: When you're in darkness, or in a relatively dark area, and you boot it up, it absolutely blinds you. It's a black logo on a white background, meaning almost the whole of that huge screen is at its very brightest. I still don't get why different coloured models are programmed differently.
Anyway, that aside, it's ultimately subjective. I would just say whatever appeals to you best. I recommend looking at them in person rather than pictures.
I've trained myself to turn my iPhone and iPad away from my face when I boot it up because of this.

iPad Air 2 is silver and iPad mini 2 is space gray. I wish the mini was silver.
 
Went with the all white set up and thinks it looks fantastic but for "professional" reasons I am going to try and return it this weekend and go with the all black set up.

The silver one I got with the white silicon and Smart Cover look fantastic. Love the silver around the Touch ID as well.
 
After having both - I much prefer black bezels. So space gray for me for everything until they offer something else with the black bezel.

They do it as a small touch detail. White bezel gets the white boot screen (with black logo) to match. Black bezel gets the black boot screen (with white logo) to match.
