I'm doing a clean restore of my 11 Pro now as I have over 8GB of documents and data. I don't really keep pictures, music, videos etc on my phone, so I'm curious of what that consists of? Is it all the gifs and stuff that are sent through iMessage?

If you look at Settings- General - iPhone storage or iPad storage it will list how much space is taken up by what app.

Each app has its own Documents & Data section to see how much space is consumed.
