I came over from the PC world in January, so I'm used to having a separate tower and monitor. I've tried the iMacs, and I do think they're pretty powerful, but something in the back of my mind keeps saying "The computer and the screen are together...if something happens to the monitor, I'm stuck without a computer for a few days..."
Also the limited expandability of the iMacs was an instant turn-off...can't change out the hard drive if you want something bigger? I can't buy one of these. And I know, there's always externals, but I have enough crap on my desk now, I don't need to be messing with external hard drives too.
So for what I want and need, the Mac Pro really was the only option for me. I use Photoshop and Lightroom quite a bit, but not professionally (yet, anyway....I do want to get into a job that allows me to do that though.)
Also, thanks to the power in this computer, it should last me a good 4-5 years minimum, and with the crazy resale value on these things, I should still be able to sell it for a reasonable amount whenever I do decide to upgrade.
