iPod touch What does jailbreaking do?

not saying i want to jailbreak my ipod touch, but i just want to KNOW exactly what you can all do when you jailbreak it..... i have an ipod touch 8GB "3rd" gen or w.e. it would be considered.....i am also getting an iphone soon, so if there is more you can do on that, list those too....

lots of stuff and it is worth it. change wallpapers, run apps that are not in app store, do multitasking are some of the stuff that you can do.
