I've had a lot of phones and the name is usually self explanatory but I just activated an iPhone X.
What does the SO stand for in the device name on Verizon's website?
Tried googling but no results.

IPHONE X SILVER 64GB SO

I do not have SO after mine. *I edited it to remove private information

Did you buy the sim-free model and just put in your sim card? I have it too on my account which shows SO at the end, but I always buy the sim-free model directly from Apple. My wife's phone was purchased directly from Verizon and doesn't have it on hers.

I do not have the SO as you can see from my screenshot above. I bought mine directly from Apple and it came with a sim card.

Probably a sim-free model thing then because mine did not come with a sim card when I purchased from Apple store.
 
I am skeptical that it has anything to do with sim free. I have an iPad Pro that I purchased from Apple. It has the Apple Universal Sim, which was configured, by Apple, at the time of purchase to run on the VZ network.

Apple SIM works with VZW now?
 
I bought it on Facebook marketplace for $650. Put my SIM in it from Verizon. Not sure where it was purchased but shows valid purchase on Apple website and clean imei.

It just got me concerned but at least it’s not just me.
 
SO means "SIM OUT" which is how Verizon marks most (at least Apple) unlocked/sim-free devices that are purchased. My iPad and iPhone X that I both bought "unlocked" from Apple have the mark.

For whatever reason they actually listed the full description on my bill for the phone instead of just truncating it.

That makes sense since i have the Sim-free model, while my wife is directly from Verizon.

Edit: I checked my statement and indeed says
