The D70 is a nice camera, but no ISO 100, a smaller sensor, 6-point AF (versus 9 in the 20D) for only 300 less than the 20D...not a hard decision to make, but stay away form the 300D. It's a lousy camera.

Before you make a decision based on these quibbles, consider something much more important: the lens choices you'll have. You'll pay significantly more for Nikon lenses as you will for their Canon counterparts. Nikon glass is just far more expensive than Canon lenses.

Of course, there's the "better optics" argument. But I can gaurantee you: no L series or Nikor lens fanatic could tell you which brand of camera captured two images that were identical, save the make of camera they were taken with.

And the Minolta lens line-up just isn't as robust as either Canon or Nikon. You'll really be limiting your lens choices if you buy the 7D.
