I'm coming from an SE (3rd gen) so technically everything is a huge upgrade, though for me personally the larger size/weight and lack of TouchID are significant negatives.
Replying to myself... I have the Pro (the standard size, not Max), and I love many aspects of it. The SE looks quite dated next to it, both the design & screen. On the other hand, the SE3 - which felt really bulky and heavy coming from an original SE - now feels feather-light!
I've adjusted really fast to swipe-up for 'Home' and I'm sure it won't take long to stop pressing the place where the home button used to be to unlock the phone! (which often works anyway as tap + faceID)
The thing I miss most is swipe-up for control centre when using the phone one-handed (in my left hand), for ready access to the camera in particular. Even with reasonable-sized hands and a popsocket grip, it's a stretch to reach the top right corner - very hit-or-miss! I wish we could customise gestures to access control centre from the *left* top corner or one of the bottom corners. Also, I thought using the access button as a shortcut might be a way of getting to control centre, but no, it doesn't seem to be possible as a shortcut, plus I find the action button very hard to press through the case (basic clear TPU), so it will probably stay as a mute switch after all. Nor can I get backtap to register unless I use my other hand, which defeats the purpose. I do wonder why the phone is so 'right-handed' in this regard (and I am right-handed; I just tend to hold my phone in my left hand).
I need to wait for daylight tomorrow to get a proper idea of the camera performance, but I think I will like the 3x lens and find it more useful than 5x. I didn't realise until this week that they are fixed lenses, not an actual 'sliding' zoom like on a DSLR. In my case, 5x would be excessive for many applications and, if it's either-or, I'm happy to have landed on 3x (coming from the SE world of digital zoom only
