What good programs out there are good for recording desktop screen. (EX: Tutorials)

If you are running Snow Leopard, then QuickTime X does it for free. And you could use ctrl + scrolling to zoom into important parts on the screen. However, QuickTime X doesn't support captions, but if you are planning on editing the video anyway, you could do captions in iMovie (beware of title safe, but I think iMovie handles that anyway), or even Final Cut if you happen to have that SW.
