I did this exact thing. My iTunes asked if I wanted to merge address book and iCal with the stuff from my phone. I said yes and it synced those two. As far as music and video goes, once you get it transferred it should be fine. As long as you have backups of your iTunes, address book, and iCal just in case, it should be fine.

cos its a legit iPhone, no hacking or anything so its locked to O2, so will O2 or iTunes not need any account names or passwords typed in?
Yes. It will only change the OSX specific files. If you do an archive and install it will replace the entire OS, leaving everything else as is as well, but it even replaces files that weren't changed from Tiger.
