Just curious as to what happens with the SIM card that comes with the phone. I paid in full a T-Mobile version, but switched it out with my current SIM that I’m using. I never needed to enter any phone number or account info when ordering the phone. How would that SIM have been activated with a phone number?

If you never used the SIM, it likely never activated and so no phone number swaps. If your old SIM activated the iPhone, then you shouldn't have anything to worry about. I guess I'm a little surprised it shipped with a new SIM, but I've never purchased a phone from T-Mobile before. You can always go into a T-Mobile store and ask someone if you have a problem/question.
