First time testing beta’s for Apple. When we get to October and Apple realeased the goods everyone, will it be a patch for us or a full install and if a full install will it go over the beta and pickup setting etc.?
 
Before the official release you will get a "golden master" which is the final build so you're on par with the "normal" users. Remember to sign out of the beta program or you will get future betas too ( 10.13.1 etc. )

Thanks. So if I stay signed in, will I receive both beta and official patches? Also, I am a public beta tester and not a developer. I guess I had just assumed that my testing would end since I believe I specifically signed up for HS and iOS 11. Need to figure out how to sign out for High Sierra. I believe I just remove the profile for my phone.

Yes removing the profile will essentially sign you out and you won't get future high sierra betas, just the public releases.

However, do not sign out th beta, if you still desire to receive the betas.
 
System Preferences/App Store pane.
"Your computer is set to receive beta software updates"
Click the "Change..." button, then "Do not show Beta Software Updates"
That will stop betas for you.
