The temperature is not too extreme. Make sure you are giving it as much ventilation as possible. I usually get 50-57C depending upon conditions and sites visited. Youtube heats up the MB like nobody's business.
Your fan reading means your MB only has one fan. As all MBs have.
Hmmm...I think your lap is exacerbating the problem. Usually cloth (I'm assuming you're wearing pants) traps heat. I know, the great irony of not being able to use a laptop on your lap🙄 However, try using the macbook in another way, one that gives more air flow. The temps should drop by a few (5-ish) degrees with good air flow.
Well, the obvious question is, what was the temperature? If it was high, then I'd say the fans are perfectly normal, and seeing as how Photoshop is a pretty heavy program, I think that the fans were probably just doing what they were meant to do.
