I just synced my iPhone to my Mac and saw that it has 850MB of "Other".
What items class as "Other" in storage?
I have 6GB of audio, 1.6GB of photos, 1GB apps, 3.2MB books, and then 850MB of Other.
My iPhone is Jailbroken so I know that will be where some of the space has gone. In fact, halfway through this I remembered the saved apps on Installous, so I just went back to delete them all and now I'm down to 610MB, so that's still a lot.
 
Probably all the jailbroken stuff you downloaded of Cydia.

Also, don't talk about Installous, that's illegal. If you can afford an iPhone, then you can afford to buy apps
 
Your "Other" should be somewhere around 200-300mb is it more than that it means you OS kinda freaked out and didn't know what to do with some files and just stuck it under Other.

A restore should take care of it.
 
Album artwork? That might take up a bit of space since I have artwork for 99% of my songs.
Does the iPhone save mail or does it just read it straight from the server? I'm using GMail if that makes any difference.
 
I had something like this happen to me when I switched over to 4.0 on my 3G. My phone had said there was over 4 GB worth of other and I had no idea why. I just continued syncing my phone and it went down each time. A restore could probably do it all in one swoop though.
