We all know that Apple makes some very elegant first-party solutions, but third-party software is at least as important to the Mac platform. So I'm curious to know what A-list, third-party Mac apps everyone here uses - titles like Photoshop, MATLAB, Maya, Quicken, MS Office, Quark, Avid Xpress, Pro Tools, etc.

The only big ticket item I use is Photoshop. I'd get more but I can't afford it. :(

I'm a new mac user since last week and so far I would highly recommend Quicksilver + plugins ... google it, it's not easy to explain what it does...but it's soooo useful.

    Also -

    UnRarX - for opening RARs
Mplayer & VLC - for opening videos
Flip4Mac - for playing wmv files and WM streams in safari
Inquisitor - plugin for safari that makes the search box act like spotlight
MenuMeters - adds CPU/ram usage meters to your menulet area
Growl - a notification system that integrates with many popular apps

A-list 3rd party: not sure if it's considered A-list to you guys but I use:
Parallels and transmit, both our best-in-class, so IMO they do belong in this category
A-list Apple: Apple remote desktop 3.1
