My parents are divorced. And my father has recently offered to take me on an overseas holiday which my mother had approved of? I am however not sure what to do, I can go during summer holiday and have fun overseas with my father however the only thing stopping me from going is I'm worried I will miss my mother. What would you do?

Since you've given very little information, I don't see any reason why you shouldn't go on holiday with your dad.

I don't know why you wouldn't go. Even if it's a couple months, you can always write/email/text, Facetime/Skype, or just have regular phone calls. That alone should be good enough for almost any non-sexual relationship for at least a few months.
