Are there any stand out applications for splitting and joining MP3 files that are straight forward to use?
 
Audacity would probably be pretty easy to use even for a novice, and it's free to boot.

+1 i am no expert but with a little playing around with Audacity many years ago i have used it for so many music needs since with Youtube there to help when i dont know how to do something.
 
Ok I'll give AUDACITY a try first and see how it goes. While on this point though, what it is I've been extracting mp3's from youtube so I can put on a cd, now even though when using Nero (windows on my mac) to burn the mp3 files as mp3's and not a music cd, when I put it in a cd player the only the first track will play. Any idea's why this might be happening?
 
I've always burnt my MP3 CD-s with iTunes and they play very well on car-player.
For a Nero-like burning experience you will need Toast Titanium on a Mac.
