What about the folks who make the EFI-X product for Hackintoshes? Wouldn't they potentially have this knowledge? Someone out there knows but isn't talking!

Apple doesn't expose any EFI settings. This is not uncommon. Many laptops and desktops for Windows also don't expose much in the way of BIOS settings. Only enthusiast motherboards with overclocking in mind, expose these kinds of settings to users.

Thanks for all the sage advice. As would often be said by Lieutenant Columbo, "Just one more question," from the menu in the Attached Thumbnail below which file is the AHCI file to which you are referring?
This one (as it's only one, that should eliminate any confusion). ;) :p

Just unzip it, and stuff those contents on a USB stick. :)

As you are tinkering with AHCI on Windows you should know that it is not so straightforward as on BIOS machines. EFI doesn't provide a facility to change from legacy to AHCI mode as it basically supports no user options at all. This causes Windows to crash with a BSD when you boot the first time after telling the system to use the Intel AHCI driver.

There is a lengthy tutorial about doing this:
