SplasID, native yellow pages like Directory Assistant on the Palm, and did I mention SplashID?
 
I guess it's not technically an app but:
-Flash support

Also, a mobile version of iWork would be fantastic.

Oh, and the ability to make photos that are emailed to your iPhone the background wallpaper would be nice.
