iCloud and iCloud backup is insecure. At least until end-to-end encryption was introduced. But even now you don't know if the other person has iCloud encryption enabled.

Could (most probably) is phishing. Unless responder typed it incorrectly, numbers do not automagically get saved to an address book.
Not true at all. Facebook Messenger, Viber, and WeChat are more popular in certain countries. WhatsApp is dominant in Western Europe and South America, but outside of that, it's a mix of messaging apps.
