Whatsapp chats are transferred in iPhone Quick Start transfer?

Hello,
I bought a new iPhone and I placed it next to the old one for the quick start transfer.

Transfer complete.

SIM card was in the old phone.

When I open whatsapp on the new phone it asks me to insert SIM card and verify the number.

Question: Have the old chats on my old phone been transferred on the new phone? After I verify the SIM card on the new phone, will the old phone's whatsapp chats (4 years worth of chats) appear on the new phone or will they be lost?

note: I don't have any backups and the old phone backup is stuck on spinning for 3 days now.

If you have them backed-up they will transfer over. Also, they should be there when logging into your account, just like when you log on via Web WhatsApp. However, any recent texts might be missing, so bear that in mind. Media may also be missing.
