when Apple allows iPhones 13 and 13 Pro to be trade-in the day after iPhone 14 comes out(Sep. 7?), what will the trade-in be worth?

Your best bet is to just look at what percentage of a phone's original value they've offered in the past on trade-ins of one year old devices. I'd assume the value will be around 60% at best, so you're likely better off selling it elsewhere.
 
FWIW, I got $500 for my 11 Pro Max last year.

I believe at the beginning of the cycle the 12 Pro's were fetching $600-700 on trade in, IIRC. 🤷‍♂️
 
Trade ins are available on release day and anytime after that. Values are highest at launch then depending on when Apple feels like it they lower the values
 
Usually it's about 50% of the cost of the previous model. Except, last year it was more.

When the 13 released, here's what Apple offered:
