When do you settle on OS language?

I'm getting a mac from Apple online store, Japan, but don't see any options for choosing OS language - is that something you decide when running first time, or will Apple assume I read Japanese like their website does?

You can define a language during the inital set-up/boot. Also, you can change your system language any time afterwards in System Preferences.
