It’s not the amount of RAM, it’s iOS aggressive memory management. Even with 6-8GB of RAM you open a page in safari, fill out a form, pop over to an email to check out some details and when you return to safari it may have to reload the page losing your changes. I’ve given up buying high end high ram iPhones. Just use a laptop.

AI is still going to be rough with the new iPhone 16's 8GB.

I'd wait until at least 12GB for AI to become fully functional.
 
• One more thing… The current Apple TV is using the A15 with 4GB of RAM. And while not identical products, iOS and tvOS are, of course, fundamentally the same. And I’d expect Apple to maintain a respectable user experience regarding performance with that hardware for at least a few more years.

You’re not multitasking on the Apple TV so the demands on hardware is lower. Even the Apple TV HD with A8 still works fine for its intended purpose.

Meanwhile, I find the Air 2 to be a very laggy experience with its last supported OS (15, I believe).

This is only partially correct.
Yes, you might only be technically using one app at a time, therefore there’s no actual direct multitasking as in two apps open at the same time on the screen.
But tvOS absolutely does utilize that extra ram to hold things open in the background, and it’s extremely noticeable.
I have both a 2015 and a 2022 Apple TV.
If you have two or more media player apps opened, every time you switch between them they will re-launch on the 2015.
Meanwhile, I can leave my 2022 Apple TV in sleep mode for several days, come back to it and everything is in the exact place that I left it.
If I was looking at a TV show or in the middle of watching a movie when I exited an app, chances are more likely than not that I’ll return to that app exactly where I left it on the 2022, even several hours or days later.

Sure, it doesn’t make as big of a change day to day as moving from an iPhone with too little RAM to one with enough, but it certainly still makes a difference.

I am curious about tvOS. I have a Samsung and there is a combination of bad OS with bad apps that make a bad overall experience! It's amazing how bad made is the Max app (wasn't even included in the original pack of apps) and Prime Video as well - I mean, it is so expansive to optimize code and interface? Ok, back to the subject, in theory you can play all with 4GB if you don't mind opening one app a time (my case). To have apps in the background, will need either more RAM or a small SSD that will be good for saving some energy during the night. But I don't know if tvOS is capable, is it?

Curious fact: in Brazil people are refurbishing old notebooks changing onboard memory, upgrading to 16 or 32 with new microsoldering equipments. I didn't find anybody expanding ram iphones, yet...

I’m not sure what you’re asking.
 
To an extent, but Apple didn't give any special consideration to the 7+ or the 8+/X for having more RAM than the base 7/8.
If Apple would of allowed the X to have iOS17 I would of waited till the 16 ProMax to upgrade. I think the X and 8+ would of been fine on iOS17 even if they held back features.
