Their unibody manufacturing process is cutting edge.
The battery in the Macbook Pro 17" is cutting edge
The EFI is cutting edge compared to the bios still used in normal PC's.
The LED backlights are cutting edge.
Whether or not it wins against HDMI, Displayport is cutting edge.

There IS a lot of cutting edge technology in Macs, it just isn't the edge a lot of enthusiasts want cut.

battery+power consumption, unibody+aesthetics, EFI, displays, multitouch, plus lets not forget one of the greatest OS' installed on it and the ability to virtualize another... there are so many things that are cutting edge besides a 2.93 GHz Core 2 Duo
