Yesterday at 2:59 am(EST,not PT) my order went through for my carrier(AT&T), the order says delivery date November 3rd.

When does Apple usually begin shipping them out?

It's depends where the devices are coming from, but I would be willing to think around Monday or Tuesday of next week at the latest. Some devices are shipped from China and directly to a warehouse, from the carrier to your residence.

Do upgrades through carrier have UPS/Fedex numbers included? I don’t see a UPS number anywhere sadly

AT&T just updated the order with preparing to ship so I assume it’ll be tomorrow or Monday or Tuesday like you said

Mines moving thru the system already. Used searched by reference (cell#) to get tracking number.
