After I click "reply" in Mail, I like to respond to the sender right next to each line in their text rather than as a separate paragraph on top (as a normal email would be). Whenever the cursor is next to their text, I want to start writing in my own font and color, but every time I put the cursor next to their text, I have to manually change the color and font every time. Is there a keyboard shortcut or menu option that allows me to type in my own font and color every time my cursor is up against the sender's font and color? How about if the font and color I want is set as my default font and color?

These formatting annoyances take up a lot of time, and am wondering if there is a solution to them.
