I receive so many emails with a profession signature displaying the company logo that display fine in Apple Mail.

Why can't I compose something similar? If I add an image to my signature, it is the wrong size and when it's received by someone, it's just an attachment.

It needs to be created as HTML. There are services that can do that for you if you can’t do it yourself. Any website developer could do it for you too.

If you go to MAIL - PREFERENCES - SIGNATURES, you can create signatures with a logo by entering the text and dropping in an image file (e.g., .jpg). You can have different signatures for different accounts or varying signatures for a single account. The image below is from my email signature in Apple Mail.

If I understand this correctly, if the recipient is also using Apple Mail then it's great. But if not, the image in the signature is just included as an attachment.

Every mail client is a little bit different.

If you take a look at Outlook / Office 365, then a professional signature is consisting of 3 parts:
1. Plain Text (txt)
2. Formated Text (rtf)
3. HTML

Depending on how the mail is written and sent, Outlook will choose the proper signature format.
To create the txt and rtf (not rtfd) format you can use TextEdit. The HTML can be composed in several ways. The most professional results and the most freedom in design you'll archive by writing the HTML code yourself in an editor of your choice like Sublime Text or Atom. Another way is to use a web service where you upload your image and get the HTML. I can't recommend a specific service as I don't use them.

And where is the image stored? Am I right that the image is not sent with the email but fetched from a server?
Yes, they are stored online somewhere. Usually they would be stored on your website server. But you can also store them on iCloud. Just google for directions.

I think HTML is the preferred so its more compatible with all mail clients..

Signature option would be good for Apple clients share only.

But since its HTML image, users can block this if the image comes from remote server.

Any image added, weather attached, or a logo will add to the overall size of the email anyway
