Hi, if I use the 16" M1 MacBook Pro as the head of a desktop PC via jump desktop or other methods, at what maximum resolutions will the MacBook Pro’s LCD be running at?
 
There does not appear to be any limitation, outside of what you might have available as a remote user.
I would think that the maximum resolution on the MBPro screen is whatever your MBPro supports -- not controlled or limited by the desktop PC. So, if you are viewing the PC screen from your MBPro, your MBPro won't show you more than what you would see on the PC.

Can you adjust the PC's video settings while viewing/controlling the PC from your MBPro? If you can, what is the highest setting that you can set from the MBPro on your Windows PC? There's your answer - if I understand your question correctly.
 
I don‘t have a MacBook Pro M1 16" with me. Can anybody try?

When Intel MacBook Pro were released, some people bought them just to run Windows. I haven’t used a Mac for a few months so I guess I can live without it as Windows workstation is my main machine these days. However, I guess I am too used to work on large laptop screen since the MacBook Pro 17" and my giant 4K TV connected to my PC is too big for me. Now I consider to just get a MacBook Pro M1 16" as the terminal for my PC. I won’t run my applications via Parallels so I want to know at what resolutions will I be getting when connecting the MacBook Pro to my PC.

So that I understand - you say you don't have a laptop now, but you feel more comfort using a laptop, and want to use that to control the workstation - because the screen to too big?
Seems like one answer would be to get a display that is more useful for the workstation.
You might want to look at ultrawide LCDs. Lots of interesting choices, and gives you much more useful screenspace than any laptop, and much smaller than that gigantic TV that you have to use now... (just my opinion)
 
I guess I am too used to looking down to view the screen. Perhaps viewing distance is another issue.
