I have decided to make the leap from iMac to Mac Pro due to my increased interest in Logic and my wife's new Photography business. I don't think I will need the fastest computer, but I want something that will last. What upgrades should I purchase? I am thinking just stock and purchase some 3rd party ram + extra internal hard drive. Lastly, when to buy? Will we see updates soon for the lower end Mac Pro? Any major advancements in the near future?

I'd say now is as good a time as any. I can't imagine a major redesign in the near future with the 8-core coming out. As for upgrades, if you're a not a heavy user, I'd just get the basic model and then add on as you need. The components will be cheaper from other vendors if you shop about.
