I think all of the iPhone 8's have this even Display models at Apple Store and Best Buy.

Slightly uneven display is part and parcel of iPhone LCD displays.
I notice the bottom of my display seems a little darker when in darker environments.

I feel the same way.
When true tone and night shift are off then the screen seems even.
I haven't heard anyone else speaking of that specific issue. It doesn't really bother me, I just happened to notice it a couple of times. I haven't turned off True Tone so I don't know if that evens it out.
My 8 Plus has this. The previous one didn't, but had a noticeably patchy backlight, hence the swap. I've noticed that it seems to disappear if you tilt the phone away from you a little more, so may be due to TT and viewing angle. Certainly less noticeable, or in fact not present, when TT is off.
That's cool. I'm still on my 6S but I'm sure I'll get used to it to.

So then it's probably not a defective screen right?
Maybe this is just how TT is?
