I am thinking about jailbreaking my ipod touch because I want to be able to make a list using notes that I can later modify with ipod. (grocery list..check off or delete item)

Will this work? and if so can I modify note without wifi conection?

You can use any non-internet based application without wi-fi. But you'll still need to get the apps via a wifi network. Notes is not internet-based so you'll be able to use it!

Apps like weather get their information from the internet but if its just notes it stores what you wrote on the device.

Thank you... now I just need the courage to jailbreak. I just got it for Christmas, it's 1.1.2 & I'm on a Mac. I see lots of info about jailbreaking, I just need to sort it out to be sure I don't mess up.

i got mine as a gift and i would have stopped using it if it was not jail broke.

it can be undone.
