Best Buy still has the 2017 i5/8GB/512GB 12" MacBook brand new for $1,311.99. You'd have to be crazy to spend that much and not just get the $999 M1 MacBook Air though.
I've also seen brand new 2017 i3/8GB/256GB 12" models on eBay for $750.
If you are looking for used you can find them for as low as $570 on Swappa.

I regret selling my pristine 12" MacBook in 2019. However, there is no way I would pay the kind of money BestBuy and eBay is asking when I can get another M1 MBA for $1k.

What makes you want one? They are pretty limited. Especially compared to the monstrous M1 Air which is also solid state.
Unless you are going to marry this woman, get something else. Let the receiver pay the crazy price for a 12" MacBook.
I think I’d choose a 2015 11” MacBook Air over one of those but that’s just me. OP, have you checked eBay? The best 12” was a 2017 i7 model.
My experience on eBay has seldom been good tbh. But yeah there are some good deals it seems
