My understanding is that you used to be able to cancel by going to Settings -> Cellular Data -> View account.

May be I am blind, but I do not see this option anymore under 5.1. Where do I have to go to cancel my plan?
 
I'm using an iPad 2 (waiting on 3 to arrive today) but I have iOS 5.1 and it's still under Settings --> Cellular Data --> View Account.

I know this is an obvious question, but you do have the LTE model, right? If you do, please post an update -- I'm sure I'll be hunting for this in 2-3 hours myself, hope you find it.
 
This is strange. I do not see the View Account option with my new iPad 3.

If I move the SIM to my iPad 2 the View Account option is visible.
