They're probably saving "new colors" for next years iPhone. Blush gold looked ugly anyway.
Likely manufacturing issues/low production yields forced them to either axe the color or delay it for next year.
So you credit rumors to be trustworthy and blame Apple for not living up to rumors?
Doubtful. My bet is that if the color is still on the table it will not appear until next year.

The gold may or may not have been intended solely for the iPhone 8.
Does it really matter? Yes I am making the assumption based on the fact that the rumors said it would be included and 99% of the rumors were correct.
The color is not here. That is the OPs question.... If the color exists or is planned for the future you likely will not see it for awhile.
Production problems.
They're making 10k units a day. In order to reach a launch quantity of 6 million units, they need to double production every 10 days. Think about how demanding that is.
6 million units is roughly the number of iPhone 6S Plus units sold in the launch weekend in 2015.

I believe that the "extra" colors will be released Q2 2018. It's like how they released Product RED this year. It was an effective marketing tool and I suspect it will get used again. I would like to see navy blue, but very doubtful it will ever happen.

I think your 99% figure is just a bit jaundiced. If you look at all rumors, you don't get 99% accuracy. If you keep correcting rumors with more and more leaked information as you get closer to announcement date, the rumors become more true as they are adjusted.
Take each rumor, on its' own, without corrections or adjustments, you don't get 99% accuracy. I clearly recall one rumor that said all the new phones would have OLED displays. And that wasn't so long ago.
I heard rumor next iPhone would let me use Apple Pay with no money in my account. Boy am I ever disappointed it turns out not to be true.

I am not the OP. All the OP asked was where the color was and if it was going to be available? Perfectly logical assumption to me considering the gold iPhone 8 and again accurate rumors of the X that also mentioned the gold color. I didn't see anywhere that he attempted to blame Apple for not releasing the color?
With 7 Billion plus people on the planet, you can find all kinds of loopy people. You realize there are idiots out there that think the earth is flat? Am pretty sure there are a few conceited people that judge others by their electronics, and color of such. They call it fashion.

Main demand is one reason, another is manufacturability. Their will always be introduction of colors to bump sales, but count on some sort of silver/white and black/dark grey as mainstay. It's what most people want. Same with cars, most are silver/grey or white or black. Other colors come and go, but these always popular.
