Where is my backup gone?

Why is it that on my IPAD, when I go into ICloud, manage storage, I can see all my apps and the sizes of the data saved... but when I try to restore a backup from ICloud, none of them bring back all the data / apps I had installed? I've tried every version available to me in ICloud and none bring back Garage Band (for example - which has 60MB of data shown).

I need this data restored and its obviously there if ICloud is reporting on it.
