I have Lion 10.7.4 and after I highlight text and then right-click in Safari I choose "Add To iTunes as a Spoken Track" but it doesn't get added to iTunes. I have looked in Music but nada.

Where should the file that gets created be located on my Mac?

I just tried it (never used that feature before) and mine got saved to:

/Users/YourUserName/Music/iTunes/iTunes Media/Music/Unknown Artist/Unknown Album
 
Thank you prisstratton. I tried the same but nothing gets created on my computer as it does in yours in the same location.

My guess is that it is not creating the file but why isn't? Hmnn.....

Ok, fixing the permissions did it. I now get the text to audio file window.
