I have looked all over, and I'm honestly going crazy.

I'm sure that the sound options are right in front of my eyes, but according to the iPod Touch manual the option should be in Settings -> Sound, but on my touch there is no Settings -> Sound.

I'm sorry for asking this, but it's driving me crazy.

By the way, I have the latest firmware as well as the legit purchased Mail/etc apps.

Thanks!

Settings > Mail you can set when to check

or Settings > General > Sound Effects

it only works in the headphones not like the keyboard clicks you only hear new mail in your ears.

I believe its a bug by Apple. My question is, will Apple clean up some of the bugs in these apps or will they charge us an extra $20 to get that update.

DAMN!

I thought/hoped that it would make a beep or something, like one of the alarm clock beeps or whatever!

Oh well I suppose!

Thanks :) - at least I know I'm not going crazy!

It should, but apple was lazy and they just did a direct port of the iPhone apps, nothing (except for maybe some permissions) is different in the iPod apps. They should have at least made it so the iPod beeps when I get a message!
