I had a kernel panic last night and a report was sent to Apple.
Where would I find that report please?
I scanned through console and saw nothing.

Well, I found it but it's not in Console that I can see.
Full path is
/Library/Logs/DiagnosticReports/Retired/panic-full-2020-12-28-053934.0002.panic

You should also be able to view the report when asked whether you want to submit to Apple...

I had one on my M1 mini today, came back to a restarted computer. Seems to have been caused by some part of the Bluetooth stack.

Yes that's right and I did view it. Unfortunately there seemed to be no option to keep a copy.
Evidently once it is sent to Apple it then seems to reside in the Retired folder. Maybe it also removes it from the console too as I still haven't been able to find it there.

best way to open them is to do it via Terminal.

In Terminal.app type: open /Library/Logs/DiagnosticReports/Retired/panic-full-2020-12-28-053934.0002.panic

That's handy to know for the future. Of course that would require that you knew its name, but I get the point.
Could you do - open /Library/Logs/DiagnosticReports/Retired/panic* or something like that?

Yes you can do wildcards like open /Library/Logs/DiagnosticReports/Retired/panic-full* or you could go to /Library/Logs/DiagnosticReports/Retired and list the folder cd /Library/Logs/DiagnosticReports/Retired && ls -lah

Yesterday I got my second M1 mini (a 16GB which is replacing the 8GB) and with both of them I've had panics due to "dcpav-audio-interface-epic", which from some search I did the first time seems to be related to HDMI. With the first mini I seemed to have resolved by connecting the second monitor with a DisplayLink adapter instead of the HDMI port. This morning I found the new mini restarted with the same panic and I had connected the second monitor to the HDMI just to try. So I have connected it with DisplayPort again now. Hopefully that will fix it again. There are a number of people having various issues with HDMI apparently.
