So, I’m definitely going to get the 15.4 2.2GHz i7 MBP (my first Mac) and coming from a C2D @2.2GHz Asus, with 4GB of ram @800MHz, I will definitely see some drastic changes in speed.

But, there are some upgrades I’d like to do, I use allot of photo editing and HD video content, and some casual gaming.

Thing is, my current HD runs at 7200rpm, and going to get a 5400rpm HD on the MBP, and was willing to perform a upgrade myself to a 7200rpm Scorpio Black, but considering the software and usage I give to it, what would be a bigger boots in performance, upgrading to 8GB of ram or keeping 4GB and getting a 7200rpm HD?

Stick with the 1333 MHz memory. However, both will work in your MBP.

Shop around for quality memory that suits your needs at a low price, not saying that you haven't or that Corsair is not quality, so that you may save a few bucks. You should be safe with the selection you indicated though.
