Title pretty much says it I have a evo 500 SSD that’s loaded with Catalina OS and data which I removed from my 2012 I would still like to have the option to boot it on a 2014 Mac mini at times
So should I just boot it from a USB 3.0 enclosure that I already have or should I buy an enclosure that has thunderbolt connector Any input and/or recommendation is appreciated

just stick to what you have is fine i feel.

Also, I don't think there is a thunderbolt displayport to storage device cable or enclosure?

I use these models on my 2012.

Never had an issue with the enclosure and the price sure is right.

*Edit - sorry. Just noticed you had a USB 3.0 enclosure. @Kaida is right. Just use what you’ve got.

Does what you have now work?
If so, use it.

Run Blackmagic Speed Test on it and post your read/write speeds here.
Reads should be in the 420-430MBps range.

FWIW, here's an Oyen Digital 4tb USB 3 external SSD on my 2014 Mini

And this is a Samsung 1tb T3

I know that thunderbolt should be capable of higher speeds, but not sure what the real world difference would be.

Wow good to see the Oyen keeping up with the Sammy.. I got my eye on them now since buying their Mobius enclosure for my audio and sample drives. They seem to be pretty decent and their support team is totally on the ball too if you need them for anything.
