How did you connect the two 4k monitors?
Thunderbolt USBC from Mac to dock. Thunderbolt USBC (dock side) to DisplayPort (monitor side) cables for each monitor. Extended desktop mode

Thanks - so you're basically using two of the outgoing TB ports on the dock? For some reason I was trying to preserve as many outgoing ports as possible and went for a TB -> Dual HDMI 4k@60HZ adapter which works fine so far (I planned on getting a dual DisplayPort adapter but put the wrong adapter into my Amazon shopping basket).
 
I am getting confused with all these hubs! I have a new 16” arriving in a couple of weeks hopefully. I just want a one cable hub solution that will let me plug in:

Displayport 4K60 (diplayport to thunderbolt cable used currently with my M1 Mac Mini)
Gigabit ethernet
USB-A for sound bar
Power

Any you guys can recommend?

Pleasure. Exactly. 2 out of the 3 outgoing TB ports each connect to a 4k monitor. Sounds like your approach works - so great. I’ll probably split the third thunderbolt for non-video peripherals. Using the usb-a for a Logitech 720p webcam which seems to work well
