I've looked on the Intel website and tried to determine which CPU Apple is
using in the 27" iMac i7, Any idea?

    i7-940 4 cores/
8 threads 2.93 GHz up to 3.20 with turbo boost 8 MB 45 nm

    i7-870 4 cores /
8 threads 2.93 GHz up to 3.60 with turbo boost 8 MB 45 nm

My guess is the 940 as this runs cooler?:)

The top of the line iMacs use lynnfield series nehalem cpus (i7 860 for last year and i7 870 for this year)

i7 940 is bloomfield series, and bloomfield series has a higher tdp value (130 vs 95 of lynnfield) so they run a good bit hotter. The major difference between bloomfield and lynnfield is that bloomfield runs triple channel memory vs lynnfield's double-- but in actual real world situations, you won't notice a difference.

Bloomfields are also more easily accessible to overclocking.

The biggest difference is that Bloomfield use QPI while Lynnfield uses DMI, so different sockets (LGA 1156 vs 1366)
