I think you're confusing "a mobile device" as something you literally use while walking. It mostly just means you can take it anywhere because it light and compact-ish. In bed is a perfect example. I personally prefer to use a 12.9" Pro vs a MacBook in that kind of situation.
but I still find apps like Skype or pages or even just simple multitasking on iPads limiting compared to a MacBook or laptop.

I find the ipad pro to be the easiest to bring with me and setup in bed. I use a smart cover and it is surprisingly stable, on the 12.9 so it works fine. Also, i can simply open an app with a tap and even use voice dictation to navigate if typing is uncomfortable. That's a big plus over the macbook to me.

One big thing I will say that I love about using the macbook is the adjustable screen and incredibly sturdy base. If Im lying flat on my back, putting the laptop in my lap and watching is easy whereas with the ipad, it is a little unstable and the screen is pointing higher than I would like.

Ipad is also much sturdier in terms of construction. Less moving parts or open ports for stuff to get into.
