Probably the current 2015 on there with integrated graphics is the safest.
They've had issues but it's not a 100% failure rate or anything, it's just been the primary point of failure. So you could have one for 5 years without issue or it could be 5 months. If you really just want piece of mind then get a refurb one with Apple Care and don't worry about it.
The actual MacBooks don't have known graphic card failures. I have one with a Radeon Pro 560 and it works flawlessly...
There were some problems with models between 2011 and 2013 of retina MacBooks. This problems are known and Apple has a repair extension program for customers who are affected...

Every model is "safe to buy" except the 2011 one.
Apparently there's a workaround. You can just turn off the discrete gpu so if it's failed it'll just run off the integrated card. Sweet!
Edit: it seems to be the AMD chips that fail and I really want the laptop for the quad core cpu power. The gpu is just a nice bonus. I've used an Intel hd 3000+ and it handle my needs.
